Ruby Lai Mai Lee, 77, of Auburn, Alabama passed away peacefully on Sunday, October 12, 2014, in Winchester Medical Center, Winchester, Virginia.
Ruby was born in 1937, in Bangkok, Thailand, the daughter of the late Shu Wing Ng and Wai Yin Yuen. She lived in many places including Shanghai, China; Guangzhou, China; Macau, China; Lahad Datu, North Borneo; Hong Kong, China and Taiping, Malaysia before immigrating to the U.S.A. For the past 30 years, she resided in Auburn, Alabama, and spent her last six months in Winchester, Virginia. For more than 10 years, she had also lived for many weeks at a time in Minnesota.
Ruby had an accomplished career. She was a school teacher, and a kindergarten principal at a school she helped co-found in Hong Kong. She also co-owned businesses in Malaysia and Hong Kong. Finally she helped run a restaurant in Auburn, Alabama before retiring around 2001. Ruby had strong faith, and was always active in church wherever she lived. Ruby was a member of Lakeview Baptist Church in Auburn, Alabama.
Ruby married Fupo Lee in May 1st, 1988, in Opelika, Alabama.
She is survived by her husband Fupo Lee, her daughter, Rose Wan-Mui Chu (John) of Little Canada, Minnesota; son David Shing-Chung Chu (Yvonne) of Auburn, Alabama; son William Shing–Hon Chu (Lee Kun) of Linden, Virginia; stepdaughter, Lam Jasmine Bauman (Bradley Christopher) of Little Rock, Arkansas; four grandchildren, Vincent David Chu, Audrey See-Ting Bauman, Abigail See-Kay Bauman, Andrew Bruce Wai-Ming Bauman; two sisters, Elain Ng and Lillian Ng of Hong Kong, China; and four brothers, Edmund Ng of Toronto, Canada, Timothy Ng of Richland, Washington, Edward Ng of South Pasadena, California and Edwin Ng of Vancouver, Canada.
A funeral service will be conducted at 11:00 AM on Saturday, October 18, at Omps Funeral Home, Amherst Chapel with the Reverend Kristin Whitesides officiating. There will be a reception following the service.
A memorial service in Auburn, Alabama will be held at TBD time on Saturday, November 1, at Lakeview Baptist Church. A celebration of life gathering in Little Canada, Minnesota will be held at 6:00 PM on Saturday, November 15. A memorial service in Hong Kong is also being planned.
